Anyway, this is my secret versioned recipe (shhh) after some trial and expirementing, this is what I do. And if your poor sweet granny asks you what you're making, its code name is: Pineapple Coconut Cake.
3/4 c sugar 6-8 pack of vanilla pudding 1 20oz can of CRUSHED pineapple w/juice 1 cup toasted coconut 1 18oz box prepared yellow cake mix 1 container cool whip
Make the yellow cake in a 9X13 inch pan. While its baking, combine the sugar and pineapple w/its juice in a medium saucepan. Cook over medium heat for 20-25 minutes, until slightly thicker, stirring occasionally. Allow cake to cool slightly, and pierce top of cake with fork at 1 inch intervals. Pour pineapple mixture over cake, and cool it completely, in the fridge for a few hours. Spread pudding over the cooled cake, then spread cool whip on top of that. Refridgerate cake more if needed. Sprinkle toasted coconut before serving. Keep cake refrigerated.
I find that it tastes really good fresh, and the second day, it tastes even better! And the best on the 3rd day!
