Here you go, TDC!
They don't have a website of their own. BUT I grew up in this town and remember eating here as a kid.
I've been to a number of taco shops around the country and I've had your usual taco bell, del taco and such.
Short of a dedicated Authentic Mexican restaurant, such as old "El Amigo", now out of business, this
IS NOT your average shop - I just read a patron from London England state that when he comes to town, he
makes it a point to go here.

In Hawaii, they don't have authentic Mexican food shops like they do here.

IF I were a betting man, I would approach the owner of Cotija's and haggle about starting a chain on the islands.
I'd have to INSIST on HIS employees, being TRUE Mexican Immigrants as worthy employees:
I am very familiar with Mexicans, they are very hard working people and when it comes to their own dishes, they
cannot be beat as chefs of the dish.
This establishment is CLEAN!!!! The people are friendly... DEFINITELY a delight!

Very happy about them being in my town. less than mile away via quiet side streets.

Hey, firebird, have you ever seen American tv series called '' Twin Peaks'' ,by director David Lynch?

It was aired in the 90ies, I was a kid but I loved it. Anyways, in the show, there was this FBI agent Dale Cooper, who said (and this is my favourite quote by him):
every day do something nice for yourself, whether its a nice strong cup of coffee, or enjoying a book, or buying a new shirt...but the point is to treat yourself to simething nice and small🙂

I really do like this agent Cooper guy and his wisdom. Btw, he was played by Kyle McLachlan.




No, I am afraid I missed a lot in the 1990s. I was on the road, driving a Semi cross country.

It doesn't hurt to treat yourself right, just don't forget to beat yourself up from time to time to keep
you on your toes. 😉

Tostadas are a very simple dish to make at home - refer to above ingredients
Below link can take you a bit further but the pic they show looks pretty wimpy compared
to my Cotija's Tostadas. Cotija's Tostadas look like they have a pound of lettuce cheese and
tomatoes on them.

At the grocery store, look for flat crunchy corn tortillas - that's your base.
Refried beans are just what the name implies - it's going to be a dryish paste similar to
instant potatoes in consistency. fresh chopped or shredded iceburg lettuce, Grated American cheese
and small tomato squares - VERY simple.

My love affair with bean tostadas go back to when I was in 1st grade. The school cafeteria was staffed
by Hispanic employees and Cotija's Tostadas are very much exactly how I remember them making it way
back when. I live just 15 miles north of Tijuana, BC, Mexico. And Mexican workers come up here every day
to work and they are VERY hard working people. Good People.
An excellent source of inspiration for young Americans, IMHO.

Imma look for that restauraunt, as soon as possible, Cotija. I hope I can find it.
And yes, I had some Mexicans mover guys, who helped me move, very quick and efficient. All this other stuff we hear is stereotypes, prejudice, ignorance and even racism.

Is Tijuana close to San Diego? If so, I was there, I think. It seems very relaxed area...



Si, Senorita! Just south of the border, south of San Diego.
Don't know how it is, now. I think the last time I was there was in the late '80s.
There... South of the Border, Down Mexico way!!

Sometimes, the ability to find great pleasure in the simple things, is the greatest gift of all.
Tonight, it was Genuine Mexican made Tostadas.

My neighbor planted an avocado tree way back when and it grew and produced fruit year after year. He was a Naval Vet. and Pearl Harbor Survivor. Played the steel guitar like a pro.

Cotija's smothers their rolled tacos in guacamole and cheese. - I have a feeling I just might go back for seconds. 🙂

Oh..... TDC, forgot to mention I think Cotija's is a very small local franchise. But if they were big like Taco Bell, Taco Bell would be hurting bad. When Cotija's started out, they were in a small building about the size of a two car, garage, if that, with walk-up window and tables with round tilted awnings. Incredibly simple affair. They've been in business for 39 years, now.

Oh yes their Shredded Beef and Cheese Burritos are massive - about two and half times the size of a Taco Bell burrito.
IF you're ever back in San Diego, treat yourself to some Cotija's. - Oh yeah... they are STILL >FAST< Food.
That's it, they are "Fast food, with fine cooking" at reasonable prices.

Their rolled tacos, smothered in Guacomole, shredded lettuce and grated cheese, are only .85 cents each. 4-5 of those
would be the equivalent of a Big Mac and Large fries - Micky D's Big Mac Combo meals with a McDouble cost about 8 dollars and you would wait longer for that order. - Cotija's generous, and DEFINITELY Authentic. - I've eaten home cooked Mexican and Columbian food kindly cooked by friends' mothers and wives who are the real deal. SO.... that experience gives me some authority when dining out. I gotta get that menue posted, for ya. 🙂

Thank you TDC, I like WN and JC along with Waylon Jennings, as well. Long time fan. I can relate to their music, like a glove - it's from the heart and down to earth. I also dig Blues, Big Band, Jazz and Classical - I am very selective when it comes to country music and a few other genres. I'll admit I wasn't always a big fan of Mariachi. That's one you learn to enjoy. 🙂

Check this out... if I didn't say it earlier

An email excerpt to a family member in Hawaii:

"Check this out.... they sell the crunchy tortilla for 15 cents, each.
Really, I could send the tortilla, and you guys prepare the refried beans, lettuce, grated cheese and tomatos.
The tortilla has a flavor that I haven't tasted - it has a slight sweet taste, as if they very lightly dusted it with powdered sugar.
It's REALLY good.

Shoot, 30 tortillas for 5 bucks shipped for $ 8-10 - figure about $ 15.00 total to the island is my guess.

That's about .50 per tortilla with the aforementioned ingredients, you could still enjoy it for about the
same price, if you make it, yourself."

I also told the recipient that I talked to the shop employee about how I thought they should open up a shop
in Honolulu, where all the traffic is. He said they have Hawaiian patrons that have come here and now have
friends and family to come to the taco shop place an order and actually ship it over to Hawaii....

Now.... you people tell me this.... Shipping an order of Mexican food to Hawaii from a taco shop.... Not a Mexican
restaurant, a walk up/walk in TACO SHOP.... IMHO... that's says a LOT about how good this place really is!!!
