Actually.. my gay friend is a Pisces and his mate is a Leo. Obviously the Leo is not and will never be the 'bottom.' I should ask him about my theory. lol

Im not sure that they are! a work colleague is a Cancer and his partner is an Aries and its "Definately" the Cancer that wears the pants in that relationship (so to speak!)
I know a lesbian couple, and they behave completely different than their straight comrades.
Aries .... she displays NO jealousy, NO possessiveness of any kind. She doesn't exude sexuality, she doesn't try to compete for attention, doesn't flirt ... and most importantly, she doesn't try to control her girlfriend in any way and just lets her flutter around. Her girlfriend is quite a flirt herself, and the female Ram is compelety indifferent to it and shows absolutely NO insecurity about it.
That ^^^^^ is way off from a female Aries who is straight.
The other is Taurus ... and she's extremely impressionable, she makes none of her decisions, and relies exclusively on the opinions, judgements and decisions of her partner. She breaks at the drop of a hat .. a person only has to look at her the wrong way, and she shatters in a million pieces.

I know Rams like you described in straight relationships as everyone varies depending on maturity, other planet positions, etc...
On the other hand, the female ram in a same-sex relationship might be at their best (feel more at home) as there's a constant struggle of 'who wears the pants' in straight relationships as she-rams are not that feminine.
The feminine signs like Taurus females, may need constant validation in a same-sex relationship as the natural inclination will be to gravitate towards more masculine or the opposite sex. Also the bull is an earth sign so there's the constant 'how does society see this?' unlike the ram who is more iconoclastic/rebelious
