Exactly, whether closed or open, it's always two pages deep, in both cases you have to take it a step further to know more about the book.
Tbf, if it's closed you only have 1 page in front of you - either the cover or the back, assuming the book lies on a table horizontally. To have both pages deep with the book being closed, you'd need to make an action to turn the book. If you see both covers simultaneously...is it closed or open?

I didn't have a table in my mind when saying that, It was more in reference to cover vs content of a book. I could be wrong but the figure of speech implies that an open book has nothing to hide. My argument is whether you're looking at the cover (front and back) when it's closed or inside when it's opened, it's still two pages of information that you'll have to inquire further on, if you're interested in wanting to know more.

I just got into thinking about books in detail.
