Ok, ive just had dinner and it was a good one. A suggestion for all those who are too lazy to cook.

Boil a spud then put it in the oven for half an hour or so.

Make some guacamale (avocado, sour cream and lemon juice), cut up a tomato and steam some vegies.

Remove the spud, put it on a plate, cut it up and put sour cream, guacamale and tomato on top. Put steamed vegies on side.

Yum!

Potatoes are full of natural sugar too. Probably not a good thing to eat all the time, but once in a while you can treat yourself, if you like to. I am having stir fry vegtables and rice with chicken tenderloins. The stif fry has aspargus tips and red peppers, yellow squash, pea pods, broccoli, etc...sound good?? very colorful too! and a little tamari! yum! the dogs are having scrambled eggs! a whole dozen!!! They love them and it makes them shiny.

I like all the fattening stuff on my baked potato too...I have the same strategy as you LG, an extra bit of effort next time I work out.

Hey, I swear to you all that MICROWAVING your potato will keep it more moist and will actually taste better than using the stove. Try this and you will see...it sounds crazy because it's not the traditional method of baking your potato, but if you don't believe me, cook one in the stove and cook another in the microwave and compare! 😛
