Hey Cortica, I have the most amazing cookbooks and yet never cook! Strange huh? Anyways I have 2 great recipes for you one w/meat and one w/out....I'm just sorry you don't have the cookbooks to see the pics! Very simple to make too. I'll give you both. These are from the Soup section of one of my cookbooks.

Black Bean Soup (serves 6 to 8)

- 1 cup dried black beans
- 1/4 lb bacon, diced
- 1 onion, diced
- 1 meaty ham bone (don't have a clue on this one Cortica!)
- 7 cups light beef stock, heated
- 1 bouquet garni which equals to - tying together thyme, basil, parsley and a bay leaf (I guess one of each Cortica)
- 2 garlic cloves, smashed and chopped.
- Salt and Pepper.

Soak beans in cold water for 12 hours. Drain and set aside.

Place bacon in large soucepan and cook 3 minutes over medium heat.

Add onion, cover, and continue cooking 8 minutes. Stir once or twice during cooking process.

Add beans and remaining ingredients. Mix well and bring to boil. Cook 3 hours, partly covered, over medium heat, stirring occasionally..

The other recipe w/meat is called carolina beef and beans. I'll post it soon for you so be on the look out for it! It's been an exhausting day Cortica...what with no sleep the past few days and going to college nite classes I could give "rag" a WHOLE NEW MEANING! I love my life however! Go figure.

Anyways will post the "carolina" recipe for you as well between tomorrow and the weekend (I won't forget about you that's for sure). It's definitely a keeper for those who NEED meat w/their soup! It does look delicious I must admit!

Hey Suzy, I have a terrific recipe for a "navy bean soup" out of the same cookbook. (I wonder if it's the same as yours? Does your recipe include pork?) It looks above and beyond "yummy" in the cookbook! It's called "Navy Bean Soup"!

The cookbook also lists soups for lentil (my fave BTW Suzy!) & Split Pea. Hey post your creation and we'll mix and match!? LOL

You know Suzy I used to love cooking for a S.O.! Now no guy is worth my time? It's soooooo depressing isn't it? Or at least it sounds that way 4 me Suzy. They just don't know a good thing do they? :o( (just my opinion that all men should be frowned upon!?)

What do you think/or what are your thoughts Suzy?

Ok, her goes and I dont measure anything so this may not be the way I make it but you can fix it up according to your own taste. The main thing is the ingredients are there.

NAVY BEAN SOUP

1 sm bag of navy beans
2 med. yams/sweet potaotes
1 lg. onion
1/2 lb of bacon or ham
2 cloves of garlic
salt and pepper to taste
tamari
5 cups chicken stock

Wash beans and cook for an hour or so in 6 quart stock pot.

Drain and rinse clean and add chiken stock and a little more water.

Peel and cube yams or sweet potatoes and let cook down.

Cube and saute bacon or ham then saute onions and garlic(dont cut onions to small because they will cook down anyway.

Stir often as it cooks down add more liquid if necessary.

Add tamari and salt and pepper to taste.

Serve with some corn bread and collard greens! YUM



CHILI-MAC

1 1/2 lbs. bacon cut up in 1 inch pieces

2-3 cans tomato paste

6 cloves of garlic

10 hot peppers cut up leave seeds and juice in (yellow wax)

1 lg. onion

celery salt

1 1/2 lbs. macaroni

Fry bacon until crisp

Dice onion, peppers and fry until brown in bacon drippings.

Add tomato paste, celery sat and bacon.

Simmer about 1 hour, stirring often to keep from sticking (low heat)

Cook macaroni and drain.

Add sauce and mix will.

It is HOT HOT HOT!

Can serve with bisquits and some people eat honey on bisquits to cut the hotness? Really good! Sound weird but it is good.

BREAD PUDDING

1 pkg. vanilla pudding
4 tbs sugar
3 cups of milk
1/4 cup of raisins (golden)
2 tbs of lemon peel
1 tbs butter
1/2 tsp of vanilla
6 slices bread but into cubes
1/2 teaspoon cinnamon
1/4 nutmeg

Mix pudding mix and sugar in saucepan. Stir in 2 cups of the milk. Add raisins and lemon peel. Stir constantly, cook on medium heat until full boil. Remove from heat; stir in spread and vanilla.

Pour remaining 1 cup milk over bread cubes in large bowl to moisten. Stir in pudding mixture. Pour into 1 quart baking dish.
Combine remaining 2 tablespoons sugar with cinnamon and nutmeg. Sprinkle over pudding. Heat broiler. Broil 2-3 inches from heat until sugar mixture is lightly brown and bubbly. Serve warm with a little cream on top and cinnamon!

EASY PAELLA

1 lg onion-cut- chopped
1 lg red and green bell peppers- sliced
1 clove of garlic-minced
2 tbs olive oil
1 can of tomatoes with juice-cut up
artichoke hearts(my fav)
1/2 cup white wine
1/2 tsp thyme
1/4 tsp salt
1/4 tsp saffrron
2 cups cooked rice
1 cup corn
1/2 lb shrimp-peeled and deveined
fresh tuna chunks

saute onions, bell peppers and garlic in oil until clear. Stir in tomatoes and juice, artichoke hearts, wine and seasonings. Bring to boil; reduce heat. Simmer for few about 10 minutes. Stir in rice, corn, shrimp and tuna. Cook for another 5 minutes or until seafood turn pink and mixture is heated. Very tasty and makes nice presentation with all the color!

I have another for seafood over angel hair pasta but I will do that one later.
