Scorpio Boss - Getting Into My Head...

I have a Scorpio boss for my internship.
She'd been kind, and nurturing to me for part of the time.
At other times she's been egotistical and an unclear communicator.
She also seems unreasonable and I don't fully understand her motives nor her wishes.
Sometimes shell stand over my shoulder and pick at little ways I do things, very annoyingly, but overall except for those random occasions, she isn't a micro-manager.
I began a project last Wednesday which has been unfinished for 3 years, I have taken it to 75% complete 5 days later.
Anyways, a day after starting the assignment, she asked me 3x in the same day, "When will it be done? The deadline?"
I told her, I have never done a project like this so I can't say. She kept on asking despite me giving her the same answer. So I kind of blew a fuse and said, "I'd love to have it done by Friday, but that is an emotional response based on nothing, so I don't know what to tell to you, that I haven't already said. After completing this one, on a similar project I could give you a deadline."
Anyways, I showed her the 3/4 point today, and she said, 'I'm impressed but you said this would be done Friday.' She kept on doing ttat over & over again.
We're on a similar strange point where asked me if I was going to put a gui (visual computer menu) on the database, and I asked her, if she thought it would be needed, she said no. Then she said it would be needed, and then we found out we wouldn't be able to get it approved if it weren't made in a very short period, on top of that we don't have the software necessary to make it, I asked her why we needed the gui and she responsed, "Well we don't it just seems that you really wanted it."
The lady is very kind, but unattractive, overweight, and has extremely poor hygiene. She also was artificiually inseminated and has a son without a Father. At the same time, she can be kind, generous, and honestly makes me feel relatively secure because I feel an unspoken bond with her and as if she is possessive of me, so therefore might give me shyt, but wouldn't fire me in some kind of an egotrip. Not like I'm that worried about that.

I am a Virgo, with 7 houses in Sag, and my Venus in Libra.
What is the best way for me to deal with her? Does she want me to crumple before her magnificence? Or is she playing with me because she think I'm weak willed? Should I man up and face her like an ally but a leader? What's the answer?
