I think that's a general thing for scorpios, both sun/moon placement. Scorpios often don't let people know their bad sides, their faults so to speak, because they can't handle people knowing their weaknesses/having an upper hand. This may result in feeling like people don't really know who you are, cause you're only letting them know parts of you
Scorpio moon here, with it in opposition to my sun so that just makes it double the fun.
We have issues with vulnerability. We like to be seen as these semi mysterious figures who kind of come and go as they please. We unintentionally trick people into not noticing with a very simple method; we'll know EVERYTHING about them, but they'll know nothing about us. They never realize how one sided the conversations are, and when they catch on and try to flip it, we turn it away from ourselves, projecting it right back. Or, we barely scratch the top surface of SEVERAL deep layers of thought/emotion, but talk enough to not make it seem so. We're a talented bunch. Hell, I do this unintentionally so often I think I wear my heart and mind on my sleeve, but when I really think about it, I don't. I got so good at it I trick my own damn self, how funny is that
To put it in a nutshell, we're just highly sensitive folks who don't want to be hurt or taken advantage of because we know the depth of loyalty and humanity it takes for one to open up to another. And it fascinates but scares us like no other. Scorpios are fascinated by what the general public fears or views as morbid or grotesque, because they see the superficiality in said fears, so it doesn't drive them off. It's not extremely personal to the human soul. However, emotions are, which is why emotions are something Scorpios tend to NOT mess with. They are extremely insightful and thoroughly understand/feel/process to such a high level of intensity. They'll mess with that of others if badly aspected, because again, they can read others like it's nothing. But to mess with THEIR emotions? Pfft. They'd rather drop dead

But yes, scorpio moons tend to... observe. Especially if scorpio is a dominant sign, a rising, is in mars/venus, or any of those two planets aspect to a scorpio placement. I am VERY observant at all times, but even moreso w/ romantic interests. Your crush also has that aries sun, so I wouldn't be surprised if he's constantly looking over at you to make sure you're okay.. or to ensure no one else is trying to make a pass at you ? (and to be honest, it's moreso the second option. Aries and scorpio fuel off of passion, so just know now there's a very very good chance he's moreso of the overprotective/jealous type.
