3-4 min on each side but everyone I make food for has liked medium rare
^Pretty much perfect example, but I would add a couple tips.
- Skillet. Not pan. - Leave the meat out so it's room temperature before it hits the pan. - Season one side with the salt and pepper right before it hits the pan. - Season the other side before you flip it.
Cooking: - Heat pan with olive oil on a little above medium. Lay steak down when the oil begins to smoke a little. - Fry 1min each side. - Fry 1-2mins on side (strip of fat) - Add butter and cracked garlic cloves to pan and fry steak 1 min per side, constantly basting the steak. - 1 to 2min per side again, this time rubbing garlic and thyme on the meat. - Tent that bish in foil for a min
