In the end people can eat what they want. It's their life, so live it how you want to.

Compare your medical check-up results of cholesterol, vitamins, minerals before and after implementation of a plant-based diet and you will see it for yourself, I'm not asking you to believe me. Rather than advocating for veganism, I'd prefer if people truly start evaluating their own relationship with food and how their emotions, rather than conscious choices, play a role in it. In other words..your unhealthy food choices actually just emphasize much larger emotional and possibly psychological issues that should be dealt with, not pushed to the background by eating butter because it gives people a quick and temporary relief.
Perhaps its not as complicated as a psychological issue but more they like the taste.

Taste or habit, their preference is to continue eating it because they enjoy it. Again, it's a personal preference. this is the crux of the matter. people simply don't care or they don't feel that an animal's suffering is that bad because it has no understanding of its life. they don't agree with your value judgements.
it's a difference of opinion where they value their needs (ie a meal they enjoy consuming) above an animal's experience of its life (the conditions which an animal lives and dies).
as someone said to me many many moons ago "god put animals on the earth for us." people feel that while we are for the most part, on top of the food chain, humans have a right to eat another animal if they wish.
you feel it is selfish but for them, these animals are bred to be slaughtered. why feel bad when they serve their purpose? they see little difference for us to eat animals when lots of animals eat other animals. it's the way of the world.

Opinions are subjective. Everyone is entitled to have its own but not everyone should be respected for it. Much like i dont respect jihadists who base their opinion on ignorance and destructive philosophy based on false facts, i cant respect the "personal choice" of non vegans, because for the majority of meat-eaters their decision is neither personal (they were thought to eat meat when young, much like religion), nor informed (ignorance and weak will is the source of this choice for most).
As an american physician once said "I am vegan just because there isnt a constructive argument eating meat is better in any way"
I get your reasoning, but why the juxtaposition "vegan vs omnivore" when the first is just a subset of the latter? That's the issue, the labelling of omnivores as "meat-eaters" when reality suggests they like them veggies just like vegans.
If anything, it's arguably the opposite: a vegan is the same as an omnivore, who doesn't eat meat and other types of food.
Vegans arent omnivores.
They were, before deciding they were not.
