Remember that the opposite of love isn't hate, it's indifference. If you had a take it or leave it attitude, she would be more curious or even confused. You would have messed with her head a lot more with a simple, "Great, thanks for asking. I'm about to meet up with a friend, but it was good to hear from you." That sentence alone would insenuate that you're over your ex and possibly talking to another lady.
Likewise you don't know what she was going to say. Maybe she was going to say that she was wrong (again). You could have used that opportunity to possibly salvage something and create a friends-with-benefits situation (if you're at all still interested). It sounds like this woman may not be good relationship material, but that doesn't mean you need to burn the bridge entirely. Granted we fixed signs have trouble with this idea, since we are typically all or nothing.
That being said, if you are looking to burn the bridge entirely, then don't bother apologizing. Why apologize if you ultimately want her out of your life?

I agree with both of your statements but just draw clear lines with her saying it will not be like this between us anymore. I actually respect what you said. However Pisces in general like to see if they can over come a challenge so it may make her try harder and sex will most likely be one of the tools she uses... no i don't think sex is hard to find but finding a partner to make love to is... there is a difference.
