All it takes is a love of food, creativity and heart. I don't give a flip if you're camp Cookie for a passel of cowboys on the trail, a pit master, homemaker, a seasoned restaurant person or a graduate of culinary college who sniffs French knickers in their spare time. We all have that drive and many of us show love through food.

It would really have ti blow my socks off. I never understood the pressing need to play with a cultures quisine that's been delicious since time out of mind.
They think that success needs to be kitsch. Nope. Good food stands on its own. Quality ingredients, Simple prep.

I agree with the instructor as it goes.
I started early. Cooking dinner for my sis and I while Pa was at work. Even at 10 it was magic. High school I took vocational. At first it was training for pastry chef and its art. We moved back to ______ and all that was offered was Food Service/Culinary. Loved it. Did the competitions, placed 3rd in State at 17. Maaan did I want 1st, like fire. It would have been a free ride to Johnson & Wales. As it was I got a French knife, a medal and a pat on the head. Never looked back. By then I was also working restaurant. The usual start of dishwasher, then cook, server..back and forth. I have cooked at a few places, run my own small kitchen soup to nuts. I know FOH & BOH.
Baking is a deep love and I have a blast doing cakes for special occasions, making my fondant, whole bit. Bake our bread at home, ignore store bought cookies, pie and cake.
What I love most is cooking for others. It's a high and extension of self like no other.
My super secrety dream is to own a diner, comfort food on blast. Know everyone by name, quilted steel backsplash, quality baked goods under a dome and damned fine coffee.
