Mature humor vs Immature humor?

What the difference and what does it look or sound like? And which do you think is honestly funnier. Me and friend are debating about humor and I just happened to think of this when I saw a forum on Fallout 1 vs Fallout 2.

There are lots ways to look at it.

First
If I were to play word association and you say mature, I'd say adult. So using that as a starting point I'd have to say that all my sex jokes are mature and everything else is immature as its opposite.

Second
One could argue immature means low brow or crude humor. That would take all those previously mature sex jokes and lump em in with fart and poop jokes. Personally I wouldn't want to live in a world without fart jokes.

Third
You could also say that maturity relates to the sophistication of the joke. Perhaps knock-knock jokes are immature while Chris Titus' stage performance is much more sophisticated (while arguably immature do to content) and therefore, mature.

Personally I think there's just funny or not funny. Somethings are immature on any scale and still make me truly lol.
