So, what did/do you do with your Thanksgiving leftovers?I boil down my frame into stock every year.
From that, tonight I made turkey corn chowder using the leftover corn and mashed potatoes.
I also made a casserole from the stuffing, green beans and turkey with a bit of gravy mixed in.
I am also making use of the sweet potatoes, will make bread and cookies from that.
Turkey salad on the menu as well (of course).
Can't let anything go to waste!

That's pretty impressive.
I had pie for breakfast-- pumpkin, then pecan.
For dinner, threw some butter in the pan, along with turkey breast (only!) and dressing.
That's about all the remixing I'll do-- but that's the beauty of it: no effort/still amazing.
And it was. ??_ the holidays
I'm just gonna eat them as well. Plus I just got enough leftovers for a couple of meals.
I'm eating a slice of warmed-up turkey with a sprinkle of salt and pepper...mmmm delish! 😛 *the cat has his own slice*
Not much left. 🙂
As I was prepping my turkey salad for sandwiches this afternoon I had an idea! Since I made a fairly large batch, whatever is leftover tomorrow night I'm going to doctor it up a little and turn it into 'turkey cakes' (like crab cakes) for dinner!
