Mmmm meat needs to be rare to medium rare. I enjoy raw meat too. Well done is shoe leather.
My girl does the ranch on pizza, she's a ranch dressing fool. I like pineapple and BBQ on pizza, or I'll dunk it in mustard cos I'm weird like that. For ze salad I like things like french and blue cheese combined, to caesar to even a nice balsamic sprinkled on fresh baby spinach. Vinegar rocks.

Candeh woman...let's go on an economical and delicious journey, shall we? If I mention any more expensive meats it's because they were on deep discount. *grins* Sides will get a fleeting mention, I shan't insult your intelligence and assume you can't make something like a pan of cornbread.

Stuffed Peppers:

4 large green peppers ( forget blanching and all that nonsense, slice off the tops, gut them and put them in the freezer overnight ). Stuff this with a mixture of cooked rice, tomato sauce, browned ground meat ( I use ground turkey a lot ), garlic, salt, pepper. Top with more tomato sauce..cheese if you like it, I don't use it for this.. and bake.

Taco Bake:

Mix 1 ( 15 oz ) can of tomato sauce, 1 packet of taco seasoning with a pound of ground meat. Place in 13x9x2 pan, top with one can of drained corn or black beans..kidney beans, whatever blows up your skirt..we're stretching the meat here. Then 1 bag of your favorite shredded cheese. Make a pourable mixture of 2 eggs, biscuit mix and milk. Pour over the top and bake until all is done. Top with whatever atypical taco fixings you like. This should feed all of you..twice.

Pulled BBQ Pork:

1 good sized shoulder roast
1/2 c. water or thereabouts
garlic salt/pepper
Bottle or two of your favorite sauce

Poke it in slow cooker ( get one marbled with at least a little fat, extra lean isn't the same ), pour water in bottom, sprinkle with seasonings. Lid and leave it to go on low all day. Come home, retrieve roast, pour off liquid into bowl to cool and freeze for soup at some point. Shred meat, return to pot, pour over sauce and allow to bubble along until all is good and hot. Slap it on a bun with some sides and fresh fruit. Leftovers..use your imagination, we liked smothered burritos. Pulled pork in a burrito shell with cheese and baked.

Baked Beans:

1 lb. of navy beans, dried ( you can use canned beans if you don't want to fuss with soaking and cooking ) soaked overnight, picked over and simmered until half cooked through.

Mixed with:

Tomato sauce, dried mustard ( or a squirt of good brown or yellow if you've not dried ), loads of chopped onion, brown sugar, meat of choice if you have it...bacon, smokey links, etc. Drizzled with molasses and baked low and slow till juices are absorbed and beans are nice and sticky. Slap some cornbread down with it.

Breakfast Casserole:

In pan, layer hash brown cakes, then breakfast meat, then cheese, top with whisked eggs, milk, salt and pepper. Bake and serve with biscuits or toast.

Pancakes or Waffles, cheap, fills a hole. Top with whatever you fancy. Serve with eggs or not.

Maple Brown Sugar Oatmeal, use real oatmeal for this, slow cooking. Cook the oats in water, brown sugar, maple extract, lump of butter..serve with grilled cinnamon toast and fruit. Good in the winter. Or make real apple cinnamon oatmeal with chunks of apple, apple butter swirled in.

Baked French Toast, bread layered in pan and poured well over with egg, milk, vanilla, cinnamon, bit of nutmeg. Gets custardy to spoon out onto a plate and have with sausage cakes or bacon.

Fried polenta with honey or syrup and breakfast meat.

Macaroni and cheese:

Cooked and drained elbow noodles

White sauce of milk, dried mustard, splash of worcestershire, pepper, flour and butter. Make roux, add milk, whisking well, allow to slowly come to a boil, add cheese, pour down over noodles and bake. Can add meat or not, tomatoes or not.

Cube Steaks:

Dredged in seasoned flour and browned, nestle them on a bed of green beans, top with cream of mushroom soup and french fried onions. Top pan with foil and bake. Serve with mashed.

Forgotten Roast:

Beef Roast ( or venison )
Top with one packet of onion/mushroom dried soup and cream of mushroom soup. Bake very low ( 250 ) for several hours. Falls apart, makes its own gravy.

Chili Noodles

Ground meat cooked with onion, green pepper, chili powder, extra garlic, chipotle, good amount of tomato sauce, crushed tomatoes ( or diced ) toss in elbow mac and allow to cook low and slow until cooked through and the noodles have absorbed the goodies. Minus "chili spice" it's goulash.

Biscuits and gravy.

Corned beef hash.

Stroganoff: Leftover roast shreds, one can of mushroom soup, additional mushrooms, carton of sour cream ( or plain yogurt ). Serve over egg noodles.

Porcupine Balls:

Ground turkey mixed with a handful of parm, garlic, oregano, egg and raw rice. Make large meatballs of it layered into a slow cooker, top with favorite spaghetti sauce, cook low for several hours. Serve with garlic toast.

Stuffed tater night, great way to use up leftover things like chili.

One pan baked chicken:

Raw rice mixed with water, cream mushroom soup, lay chicken pieces on top of this, sprinkle well with garlic, pepper, bit of salt..paprika if you like for color. Cover with foil and bake until done.

Chicken and noodles: Start with legs/thighs or leftover roast chicken in good sized pot. Simmer with water just to cover, a bit of base to boost flavor ( I like Knorrs from the Mexican part of the store ) and let simmer. Remove meat, return to pot and add carrot ( if you like it, not necessary really ), allow to come to a boil..make noodles during that time simply of flour and salt, make a well and keep adding egg and kneading it in until the flour can hold no more. Roll out, cut into strips, add to boiling base. Cook till noodles are done, if a bit thin, thicken it with a slurry of milk and cornstarch. Good on its own or over mashed for a carb blow out. Leftover turkey is also great. Or start with turkey legs, also economical.

Chicken pie:

Line pan with pastry, make filling of cooked chicken, a thickened base of a bit of minced onion, hot water and Knorrs, flour, butter ( yes, this is comfort food, straight up )..when that is nice and thick, stir in a box of frozen peas and carrots. Turn out into pastry, top with more pastry, vent and bake.

Turkey ham is very good ( and CHEAP, about 3 bucks a chub ) to poke into au gratin potatoes, casseroles, soups, etc. Whenever ham flavor is called for. And it's lean.

I can keep going if you like. 🙂

Oh man, I would have responded to this sooner, but I was out celebrating tonight. Thanks so much for this VB!!! All the recipes look so manageable; I already want to try a couple next time I go shopping.

You know what's funny? I still have your porcupine ball recipe from like a year ago because you gave it to me once and I just held on to it! Yay for food... and budgets!!!

Porcupines are tiny! How big are their balls—? I am hoping this is a starter and not a main.


Do you have to catch them in the garden and rip their nuts out, or can you order "porcupine balls" at the deli with your giblets and tripe?

Thanks heaps, now I want General Tsao's. Maybe some char-sue bok choy. 😛 Cooking is simply my passion. I flip it round in my head. Something like KFC for example. Do I really want or need to shell out 30+ dollars for chicken and sides..or do I want to put 10 chickens in my freezer to fry at my leisure. Oh yes I crave and oh yes I get food out at times. For the most part though, nah. 🙂
