Being overworked and underpaid at a job you feel no passion for is an important rite of passage. Takes being there to reach that threshold where you've had enough and demand more for your time and energy in the future.
She's 21 and needs to experience these mistakes/lessons in order to grow.
Just be there and make sure she knows she has your love and support in all things.

As for the guy, I’m aware she’s got to go through that tunnel to get through it and no amount of advice matters much; however, I want to really motivate her to go after her passions or at the very least nudge her to get a better paying job so that she will at least have a level of peace and happiness in that arena.
As a Leo when tend to try and get through to ppl in a way that doesn’t work for them; could any Tauruses give some advice on how your parents or mentors have successfully motivated you and nudged you out of your comfort zone or rough patch?
