aries/mars rules surgery.
scorpio too obviously.
People who work around the clock at the ER are very strong mentality and emotionally.
Probably aries/scorpios with a hint or gemini hyperness

I have read Virgo and Scorpio though it might depend on the specialty (e.g. Taurus might be an ear nose and throat specialist, Leo a heart surgeon, etc.) Aries could be good at surgery in general and maybe Capricorn for dentists. Cancers pediatricians. Veterinarians presumably Sagittarius.
