How patient should I be with this virgo woman?

Ive recently started dating again after getting out of a long term relationship, and I met an awesome woman online. We've been talking for almost 2 months now, have gone out 4x (I am a full time mom to my daughter), and have a LOT in common. I am a cancer, and I typically go full steam ahead in a relationship, however she has said she wants to take this slow, which I completely appreciate, and I think is good for me as well.

She is very hot/cold, which is typical of virgos from what Ive read. However, I dont know how patient I should be. I really like her, and would like to see where this goes, but part of me is worried that I'm getting attached for nothing. But when I do talk to her, she says things like we should take a road trip sometime, shes enjoying getting to know me, looking forward to going to see a movie with me, etc. We talk on the phone maybe once or twice a week, and text almost every day... sometimes every other day, just asking how the other is doing, etc. But I'm always wanting more, and it is a challenge for me to not 'smother' her. Is this typical virgo behavior? I do know she has been hurt before and is afraid to get hurt again, which makes her that much more reserved with getting to know someone. I just dont know how long it will take before she lets me in and wants to talk more and see me more. Any advice would be appreciated!
