I'd think mars and its aspects and house.
Aqua mars in the 9th conjunct and sextile a bunch of crap, and I'm pretty hot-tempered.

I know a gemini mars that's level-headed but sensitive.
Cap mars dude I know is EXTREMELY level though, like, can't get him to react to anything.

I thought that the more Aries placements is in your chart the more hot-tempered you are... And the same for Virgo as level-headed maybe? Virgo seems like the most calm sign.
