Any Vegetarians/Vegans Out There?

Hello all! I just went vegetarian about a month ago. I'm a student and mom, so I'm always on the go. I was wondering if anyone had any quick recipe ideas or snack ideas. I would greatly appreciate it!

@theultra79 I'm not into juicing, but I do the smoothies alot. One of my faves is applejuice, banana, and kale. It's a great way to get your veggies in and you don't taste the kale! I always keep frozen mixed berries on hand too. Have you tried the meditteranean veggie sandwich at panera bread? I am addicted to it. I always get it without the feta. It is sooo good!

Yeah one time I let it sit and it did get soggy. I always eat it right away now. I always buy my organic kale at Whole Foods. I try to buy organic as often as possible, but when I can't afford it, My city Farmers Market will do in a pinch.

Vegan:
Spicy hummus and baby carrots
Vegetable or brown rice pasta w/ pesto salad
Pasta w/ sundried tomato/black olive spread salad
Cashews/Almonds mixed with dried strawberries/raisins/cranberries
Fruit smoothy (breakfast or on the go--make sure it's dairy free!)
Vegetarian chilli
Banana bread (diary products can be substituted.) Other non-dairy baking recipes can be found here: www.egglesscooking.com
Mexican Bean Salad
Broccoli/Kale and Lentil Soup
Roasted red pepper/tomato soup

Vegetarian:
Spinach Dip or Asiago/Artichoke dip with different veg (cauliflower, broccoli, carrots)
Red pepper/spinach/red onion/cheddar cheese frittata (saute pepper, onion and spinach before adding egg and cheese)
Spicy tofu wrap with roasted veg
Fruit smoothy

These are my regular food choices.
