Makes it a lot more fun 🙂 I laugh a lot, while looking up info this place ends up referencing somehow. Before I know it, I've spent hours on a little bit of everything and I'm ready for bed lol

It's a lot, but..


The chicken:

I use thighs, cut the skin and fat off...soak in lemon juice or vinegar and water...rinse.
Season with pepper, adobo, soy sauce a tiny bit of pepper sauce...hot sauce will do. If you like it spicy, use more...I don't like it spicy.
Dice up scallions, garlic, onions, green peppers, sweet peppers...and rub all over chicken...let marinate for atleast an hour in fridge. Overnight is preferable.
Remove all the veggies from chicken, and lightly brown in oil, using a Dutch oven (cast iron pot)
Remove browned chicken. Place All the diced up veggies the chicken was marinating in that you set aside..into the oil. Cook a few minutes till lightly browned.
Add chicken. Place heat on medium low with the top on and let it cook until juices start forming.
Remove top. Let it cook down while stirring occasionally, until all the juices are soaked up by the chicken.
Stir it up add about a cup of water and 3 tablespoons of browning sauce..a stalk of fresh thyme...and a splash of coconut milk.
Bring to a boil, put top on and cook on low for about 20 30 mins.

The rice:

Im assuming you k ow how to make basic white rice...I just add coconut milk, about 2 tbsp of sugar and a tbsp of salt along with pink beans to the boiling water, before I add the rice.Just in case...you need a cast iron pot 2 cups of water for every one cup of rice, give or take. Put 2 tbsp oil in a heated pot, add water, bring to a boil. Add above ingredients, bring to another boil and add rice. Stir once. Place top on and cook on very low for about 30 mins. Do not remove top before then. After 30 mins, u can give it a light stir, only stirring the top of the rice, but if it seems too moist, put top back on and cook some more. Always let the rice sit with the top on and heat off for atleast 10 mins before you serve it.


Cabbage:

Dice up cabbage. Wash n rinse. Season with adobo, pepper and garlic powder. Salt will suffice if you don't have adobo...that goes for the chicken as well.
