I'm going with:

Rick - Aquarius - He loves his family in his own way, but has a really hard time seeing how his actions affect those around him. There are hints he has truly and deeply loved in the past though. He comes across as cold and detached and clearly he has very few actual friends. Even to his own family he is a complete mystery. Regardless Rick typically comes through when it's least expected. He's also a rebel, going against the grain of common sense and practical science.

Morty - Libra - Generally looking to keep the peace and unsure regarding his own path in life, he's typically the voice of reason and a quality foil to Rick. Like his father he is has trouble focusing, but will typically make the best decisions when the chips are down. He is kind and often sticks up for the underdog, which is usually him.

Jerry/Dad - Gemini - Talkative and witty in a corny sense. He has a very light, childlike attitude toward the issues in his relationship with his wife. He clearly loves his wife Beth, but there have been hints that he'd be happier in a more "free" relationship. He even cheated on Beth with an imaginary person. He clearly is stuck in a life that doesn't value him completely as he's not sure exactly what he wants to do. Energetically he can be all over the place, being unable to focus his scattered attention. So generally few people take him seriously. He has a nervous energy that hides his heart of gold though and has show to be brave at time in the face of danger. Other times he's a complete wimp. Clearly he has dual personalities)

Beth/Mom - Capricorn - Clearly a woman who is focused on her career and goals, her serious nature contrasts with the naive nature of her husband. Stuck in an often passionless marriage, she clearly settled for a man who she deemed to be the clear opposite of her father. Of course this happened because she became pregnant with their daughter summer. Rick proved to be a decent provided though, so she wound up staying with him due to stability rather than love. It's not that she doesn't love her husband deep down, but his lack of drive irritates her. She is passive aggressive in her marriage, and fantasizes about being in love with a manlier man

Summer - Virgo - More of an understated character, Summer just wants to be a normal girl and go to high school. Even when everything is falling apart, she is fairly composed. She is also surprisingly adept at finding a solutions to problems when necessary. She can come across as cold, but she is typically a kinda person. She's not a "go getter" like her mom, which means she can sometimes be at odds with her mother. She love her family, but find that their antics can get in the way of her being a normal high school girl.
