Open concept floor plans/kitchens are for people who microwave 75% of their food.
But why? I'm tired of never having any space in my tiny ass non-open floor kitchen.
I've worked with 3 other people in kitchens barely larger than apartment bathrooms.
Large open kitchens are inefficient and are mostly just places for families to put their stuff.

It took weeks of essential oil defuser use to get the smell of seared beef short ribs out of the rest of the house last time I made ragu. I'm positive the open concept design was just a scam perpetrated by home builders to use less material in homes yet charge the same amount.
You need a meat room.
