creative date ideas for my aqua man! :)

hi everyone! i'm a leo female currently seeing an aquarius male (met him a little under 2 months ago), and i want to take him on a surprise date soon to change up the gender role game a little bit tehe. i want it to be fairly creative. doesn't have to be expensive. my capricorn moon kinda makes me emotionally detached so things that are too romantic sometimes make me feel cheesy...so, suggestions?

things we've already done: gone to a show/concert together, made dinner for one another, went out for dinner, bowling, played video games together, hookah bar, gone to parties together, low-key chilling at home, etc.

some ideas i thought up:
?? mini-golfing...the place near me is even byob so we could enjoy some good brews during!
?? going somewhere pretty. where i live there are a lot of watering holes and summer-y things to do, but we've kind of done something similar before already.
?? take a cooking class together? there's a place i know of where you can learn how to make sushi (we both love japanese food), but it's also pretty expensive per class...
