Anybody ever boiled the carcass and made soup? I did it last year and will again...but, haven't yet...(we had a late Thanksgiving)..
Anyway, it makes an awesome stock! Then you can add onion, carrots, celery, potatoes, more chicken or turkey meat, noodles, dumplings or whatever...it is good! Season with salt and pepper and poultry seasoning...chicken soup base only if needed...
I usually just rip all the remaining turkey off the carcass, shred it with my hands into edible sized pieces, put it in baggies, freeze some of it and use the rest for sandwiches. Your soup sounds yummy though! (Especially all the other stuff you put in it!)
