Vegetarian Meatball Sub.

I have been wanting one of these in the worst way lately. I still remember the first one I ever had. The sub roll was so fresh, the meatballs were so flavorful and big, the sauce was nice and thick, and the provolone cheese was perfect. It was so long ago, I washed it down with Coca-Cola from a glass bottle with the metal top that you need a bottle opener to remove.

Nowadays, I'm a vegetarian. But I really want a meatball sub. I'm going to get some of the meat-from-wheat balls and have them as a sub. Won't taste quite the same, but it will be good enough to satisfy my craving. I might add some sauteed baby spinach & portabella mushroom slices to it, too. I'm not vegan, so real provolone cheese will be just fine for my needs. And I can wash it down with Diet Coke with lime (real lime juice).

I already ate dinner, and I'm still fantasizing about food. Ugh.

I dream about chocolate truffles and fried chicken.

**sighs** A pity my nose is disgusted by the smell of fried chicken these days. It used to be my favorite food.

they have really good vegetarian meatballs at Trader Joes. the only problem is that they fall apart when you mix them with sause if you don't mind your sub looking more like a sloppy joe

I am a vegetarian as well (not vegan) and that sounds delish!
