I like sweets on the occasion, but I'm more inclined to hearty sauces and meats. Steak/mashed taters and some steamed broccoli are a fine meal to me. I don't need my plate done up pretty if the the flavor/texture have been given due attention.
I do think it's awesome that you prepare your own jams. I have some questions for you!
IE, I'm inclined to accept a good stew or chili over a lighter dish.
Ask away. I honestly think just damned good tasting food is where it's at. Comfort chow. No need for gold dusted roses, 30 different fruit purees or vegetable cranes necessary.

On the topic of veggies and fruit, do you find the acidic levels of each affecting the longevity of what you can?
Canning meat and anything low acid requires a pressure canner. Have too. Water bath canning is no good for it, you need to blitz it properly so that bacteria levels are as low as possible. Botulism is nothing to screw with. And yes. When I put up sauces, ketchup, chili sauce, BBQ, etc. it'll keep with no flavor loss for up to a year ( like it lasts that long ). Green beans, peas, corn and so on is easily blanched and frozen. Quick shock in boiling water, plunged into an ice water bath, drained and bagged in good freezer bags. 6 months I think is optimal use time for best flavor. You can preserve any meat you like. A bit of beef base popped into venison is nice, cuts any gamey flavor. Fall apart tender and has its own stock for Bambi and noodles or whatever else you'd like to use it for ( like pulled meat for BBQ sandwiches ). I've not canned fish, but it's done with good results. And any meat you can put up stew or chilis with. Just crack a jar or two, make some fresh bread and call it dinner.

I've never smoked meats, but it interests me. I've seen my fathers friends do it, the smell is amazing. Few wood chips and you have some goood stuff. Make your own hams, smoked turkeys, etc. Make a smoker, build an edifice to nice hickory chips...mesquite, cherry, have a party. Check into some good homesteading books for good recipes and tips. 🙂

Why would you reinforce someone's internal dialogue of bs when they actually need to get slapped across the face by reality. There are many people here that get labeled as mean and brash when the reality is, they are the ONLY mother fuckers trying to REALLY help. P-Angel is a fine example. She's consistently branded as mean and bitchy when the reality is, she was trying to help.
People get so ruffled over the delivery that they fail to see the real message. Who cares if the words were "mean" if the message actually helps? I'm not trying to glorify anyone here, I'm simply saying that being nice is dumb when it harms other people.
IE, if someone posts about how much their life sucks, what the fuck is the point of posting some fake ass "Im sorry your life sucks" when the reality is, the person needs to hear someone that may actually help them out. Even if that something isn't necessarily nice. Does a drunk need to hear sympathy and nice words about their drinking problem? No, they need to get their drinks taken away and become the recipient of a swift kick in the ass.
