I'm just spitting here I have no logical reason but I could imagine it's because Ram females know exactly what they what and exactly when they want it. Virgo males are the same way. Very logical, perfectionists, and that resonates with Aries. Aries are not as conservative, and Virgos are not as relaxed. I'm sure Virgo men feel the same way about you ladies

I feel likes it's because Virgo guys can make a few other signs nervous from the fact that they exude almost an "icy perfectionist" vibe. They're also pretty mercurial. Honestly I know some Virgo guys to be very manly, so maybe the unfaltering manliness that they have causes even the ram girls to feel feminine or vulnerable as you say.
Virgo guys don't and won't take the emotional guilt from females of any kind so they can appear almost frigid when a girl cries or lashes out at them. So you can see how a typical ram girl might get frustrated at trying to get a reaction out of him. Although, I feel like this is the very same reason why this pairing works.

I've discovered that it's not just Virgo men that make meddle feminine, it's earthy men. My BF has a way of grounding my energy, take the lead, and inspiring me to want to follow and not always be in charge, and I'm more than happy with that.
And I agree with @Damanta, the Virgo man I knew appreciated that I let him know how I felt.

We second guess ourselves way too much. We overthink.
To us it feels...vain to just run on the assumption someone is into us.
As for how to make it obvious? I get it immediately through either physical contact or stating it upfront.
Language also helps...for example "let's go on a date" vs "let's hang out"
