Someone who gets it! That's exactly what it is. We have an intense soul connection so it doesn't help the situation, at all. She definitely does feel intimidated. We're always on again off again, but I do know Scorp women tend act brand new lol. She's been studying me for years, but she still doesn't understand me. She says I have a beautiful spirit, underneath my tough exterior. I'm too hard to get through she says. She has also said that I'm complicated and intriguing other times in the past. haha.

Well first I start with 1 pound of good thick cut bacon. The French use lardons of pork fat, but I prefer the bacon. I render the bacon down in a cast iron Dutch oven until crispy. Then I brown some good quality cubed beef in the bacon fat in batches. Then I deglaze the pan with some good quality brandy to get all the fantastic browned bits off the bottom. Once the brandy has cooked off I add the beef back to the pot and add flour. After cooking for a few more minutes I add a little tomato paste, some beef stock, a whole bottle of dry red white, some whole garlic, bay leaves, and thyme sprigs. That goes in the oven to braise for a bit. Then I add mushrooms and pearl onions and cool until the beef is tender enough to cut with a spoon. Finally I finish it off with some good butter to enrich the sauce.
I'll serve it with buttered noodles, but it's best of you serve it over some mashed potatoes made with lots of butter and creme fraiche with the crispy bacon crumbled on top.
