The Cancer suns and moons I know do a lot to help other people, many as nurses. That's one of the best traits a person can have. My really good Cancer friend Erin, is a community oriented Sheriff as well as being one of the few women on the fire department.
Just look how beautiful her emotional growth is. I just don't know anyone who can rise above a heartbreak on such level:

She: I want to stay married to you.
Him: I want a divorce.
She: runs out and sobs hysterically (broke my heart to see someone like that no lie)
When producers ask her what she wants to do:
She: I just want to go home!
Them: ok ok who do you want to take you home?
She: Neil!!! (the taurus guy who shes heartbroken over).
Like how much strength does it take to be around someone who just broke your heart whether intentionally or unintentionally?
She: I want to stay married to you.

This isn’t a good example, coming from someone who was actually married for almost a decade.
Everything that woman did; apologizing, forgiving, emotionally growing and still wanting to be with him? I did all that and I’m not even a cancer.
This is love at first sight, she barely knows him. It’s not love, it’s fear of being alone.
It has nothing to do with the Taurus but her resolve to 1) see her own mistakes, 2) grow from them, 3) fully experience her emotions at every level, through the bad, the sad, and the good and 4) to step outside of her ego to accept the friendship despite wanting to make it work with him romantically.

Yeah i can see your point if you believe reality shows are completely made up. However, I think for the main part the people are who they are.
