Omg I received Roses from a man that is Persuing me but the problem is I don't want him like that. What do I do? Say thank you for them right? I don't want to be rude. But I don't want him to think I want something more with him

Just tell him straight up. It prevents him from lingering, and hurting even more and it helps you get rid of that impression.

Thank him politely for the roses in which he sent you but do inform him despite your appreciation for the beautiful gesture you can not have them.

If he presses the subject matter, tell him, you can not and will not receive them but you are touched at the kindness and thoughtfulness of it all.
