Basically I just want to get to know her, she seems interested in getting to know me in her actions just not her words. I just find it strange that someone wouldn't want to know your likes or dislikes, even the basic conversation making stuff.
She may not feel comfortable asking you certain things. She might not want to come off as a inquisition.
Or she may not care to know said answers because she doesn't care about you.
It's difficult to say without observing first hand your interactions with one another.

She sounds like me lol. I am a pisces sun too, and I don't really ask any questions because I'm usually bored with the whole dating thing. At some point you've heard it all. Don't let doubt sour the potential here. Focus on getting to know her. And most importantly express to her that it's important to you that she asks you questions. You are an open book for her to read.
Don't write her off because she can't read your mind. Tell her what you want and need.

You go see a movie, go to a park, talk about likes/dislikes, etc. etc. After doing that repeatedly you get bored. My husband is also a pisces, and he doesn't talk much either. What kept me in the relationship was learning different things about him as time went on instead of just asking and finding out things. So instead of asking him his favorite meal, I would pay attention to what he always ordered when we went out. I found that to be funner.
