Lol You get used to everything. Just buy meat replacements, theres plenty in every supermarket. Seitan, soy protein etc...they imitate chicken, beef and pork. I drink rice milk exclusively. Vegan butter and cheese.
When i tried meat again after a year and two years l found it disgusting, and really hard to digest. The reason we like meat is because we were raised on it. If they gave it to you for the first time as a teen or adult you couldnt eat it.

I eat veggies with every meal (including breakfast). If you have 3/4 of your plate filled with a range of vegetables, you'll be fine.
Hashes are the easiest and yummiest. Put a little starch in from sweet potatoes (the white ones) or parsnips, braised kale, pan fried butternut squash, asparagus, Brussels Sprouts, celery, carrots, you name it. I'm not vegan so I'll add turkey or pork sausage (loose) and bacon, and it's a complete meal.

I love veggies , haven't been eating them enough lately though .. some of my faves are zucchini, spinach, eggplant, asparagus, tomatoes, kale, peppers etc.. I sautée them a little extra virgin olive oil or virgin coconut oil , spices & herbs.. now I want veggies lol

I usually like them pickled & fermented as banchan. If I'm having meat, I'll have a side of watercress, fern bracken, & mung bean sprouts w/ garlic, salt, sesame oil, & sesame seeds.
Other veggies I like:
Brussels Sprouts: sautéed in mirin and roasted with garlic, crushed chili, sea salt, & cracked pepper

Any of them roasted with extra virgin olive oil, fresh cracked pepper and a bit of sea salt. Love roasted butternut squash.
-Honey balsamic Brussels sprouts, green beans, beets
-roasted organic carrots basted with a mixture of unsalted butter and fresh minced garlic. Pull them out a bit early then melt fresh grated Parmesan cheese on top
-Rosemary red and gold potatoes
-spaghetti squash replacing noodles in my fav spaghetti recipe. Add more with mushrooms, zucchini, green bell pepper, blanched tomatoes,
-steamed zucchini and yellow squash
-eggplant burger
-pan fried cauliflower cakes

I buy whole artichokes, slice 2-3 of them in halves and boil them in a slow cooker. Drain out the juice, cool it in the fridge and drink it like tea. No added flavors needed. 🙂 In the winter time, I just drink it hot. It's super healthy and yummy! You could eat the artichokes too.

I can't read ALL this but saute mushrooms and onions in butter, garlic and salt. Buy fresh spinach. Wash spinach and towel dry. Throw it in the skillet with the onions mushrooms on high, add 1-2 squeezed lemons (careful not to let seeds fall out)
Lid it for 3 minutes.
Voila
Cracked black pepper and Cayenne pepper to taste. And or salt/bacon grease. ?

Baby carrots, celery, string cheese, cereal out of the box, gold fish, bananas, nuts, a bar of dark chocolate.... etc
Also homemade potato chips, sliced tomatoes and cucumbers in vinager.

Never cooked with them. Always heard if you slice them wrong they're poisonous. But I love them in a white pasta with capers!
Ever eat them raw? Or bake them? Add a sauce?

Pretty sure the poisonous thing is a myth (but don't quote me on that). I mean, I've been braising it that way for many years now, and I have yet to experience any negative side effects, lol.
I think I may have eaten them raw once or twice. As for baking, I've made spinach artichoke dip, if that counts.
For me its was easily , I prefer fruit and vegetable🙂I would recommend find good juicer and vegetable chopper for cooking https://cozzy.org/best-vegetable-chopper/ . Also check out the peta.org for vegan items. They have most of the DH cake mixes listed & all kinds of dairy & egg substitutes

Stir fry with tofu and braggs.

I toss mine in a little olive oil and add some Natures Seasoning and cook them right on the grill. No foil, I use a basket and cook them directly over the coals/gas. They stay crunchy that way

A little salt and pepper with raw tomatoes, cucumbers and bell peppers for a snack.
Roasted zucchini and yellow squash with Parmesan sprinkled on.
Roasted asparagus or green beans sprinkled with lemon juice and Parmesan cheese
Sauté stir fry mix with minced ginger or garlic (I prefer ginger in this case)
Carrots, cucumbers with garlic expressions oil
Celery sticks with peanut butter and raisins for another snack idea
