I believe they have a thriving art community, so there should be a few art crawls. There is an art museum that is a full-scale replica of Athen's Parthenon, if either of you like that sort of thing.
Flea markets! If you're looking for souvenirs that's better than getting the touristy kind.
Full moon is coming up, maybe take a late night stroll somewhere beautiful. Somewhere in a safe city that is lowly lit, or there are hiking trails.

The Parthenon is boring. I mean, it's okay, but it all depends on her personal interests. It's a little overrated mostly because it's a giant replica. Maybe the art inside is cool now, but I barely remember anything from seeing that place. But I was a kid then, so... yeah. But still, nothing memorable.
Most of the Civil War sites aren't near Nashville and it has like one major battle affiliated with the city itself, so it depends on what they'd be interested in. Most of the main historical stuff in Nashville will likely be related to the Grand Ole Opry or the Country Music Hall of Fame, or any of that related bs.
But it all depends on what they're into and what they'd want to see. It has turned into a major, major city compared to when I lived there. I'm sure there's bound to be something they'd be interested in seeing. She's just gotta dig around. That website you gave is a good way to weed through it all.
As strange as it sounds, she should also check Yelp to get an idea if any of these places are worth it. Tourist sites are always going to tout certain places in order to keep revenue going. Hell, locals would probably have a better idea of what's really worth seeing. We do it all the time here in Cali- people think the usual touristy things are what should be seen- Hollywood/walk of fame, Disneyland, Santa Monica, etc. ...which are fine and nice, but locals would direct you to different places that are much better since Disney and Santa Monica are packed as fuck, and Hollywood/walk of fame is so overrated. My friend from Aussie was highly disappointed when the illusion of Hollywood was actually total shit haha.
Maybe Bri can hit up a Nashville based Facebook page and ask some questions there as well to get ideas of what to do in Nashville.
Some small gift, but personal and your presence should be enough. Go out and chill with some good music to his taste and a sweet toast on his honor. Enjoy!

I'm a Libra that's low key also.
Doing even one thing that is out of your way is good enough (like surprising him with those cupcakes or traveling to be with him like you are). Nothing crazy needs to be done. Being with the one I love and friends/family, whoever he is close to, is good.
My Fiance's father is a Libra too. He's fine with dinner and family. Whatever we get him (usually
nothing too fancy because he doesn't like that kind of stuff) is good and he really appreciates it.
