I start with one and a half very large onions...


I cook intuitively for the most part and decided to add another half onion...


I think I used 2 full garlic buds...

This is a very old recipe of mine. It took me years to find just the right type and cut of steak. I use two packs of these... Got two really big fellas in the house....

Notice how I cut... thin strips against the grain...

Separate the meat and place in a bowl.


Add Extra Virgin Olive Oil... massage into meat.


Add seasoning... garlic powder, onion powder, white and black pepper, etc... and mix thoroughly.

All pans on high... one pan for garlic and onions... one pan for meat. That's a pot of jasmine rice in the back.

add EVOO to both...

Cut on your vent... crack a door. meat needs to sear for tenderness..




add onions an garlic... let sit and then sautee...


As broth collects...

...pour in a bowl. We need to save it for rich broth, sauce. It will collect several times and has to be poured off for meat to continue to sear, tenderize.

Combine onions and garlic with meat...



We get rid of the one medium frying pan for a much, much, larger wok style as that large frying pan is full and it's time to add broccoli... This pan takes up two grates.

add a little water to steam a little..

Add beef, onion, garlic to wok with broccoli... or, dump.

Now... for that broth... add worchester and soy sauce to your own taste...

I add extra beef flavor via bouillion cubes desolved in water that I boiled in the microwave...

Sorry, I don't measure... but, I make a smooth thickening paste with EVOO and flour... then, I pour in natural broth and beef bouillon broth....




Secret to all gravy....
I did add more broccoli. Virgo was anxious to pack his dinner so I had to put a little broccoli in fast to cook through. The added broccoli quite natuarlly steamed in covered pan.
